Paul Mazaitis's Recipe List

The most important thing I learned about cooking when I was young I learned when we went on vacation. We had a dishwasher at home, but we almost never did when we went on vacation, and it was always my job to do the dishes after lunch.

Doing the dishes can be annoying; you've just ate, and you'd rather sit for a bit and read, or stare at the sky with your walkman on, or just about anything else. But you also get to see the tools of the meal, what was used to put it together, and learn a tiny bit of responsibility, and discover that there are ends of things you ordinarily wouldn't think about.

At this point, I don't mind doing dishes most times, because I always get neat ideas when I do the dishes.
